I had some leftover french fried onions and noticed a recipe on the back, just add chicken. I made it last night for dinner and it was really good!

2 cups (2 oz.) FRENCH’S® Original or Cheddar French Fried Onions

2 tbsp. flour

4 (5 oz.) boneless skinless chicken breasts

1 egg, beaten

Directions:

PLACE French Fried Onions with flour into plastic bag. Lightly crush with hands or with rolling pin. Transfer to shallow dish.

DIP chicken into egg; then coat with onion crumbs, pressing firmly to adhere.

PLACE chicken into disposable foil pan. Sprinkle with additional onion crumbs, if desired.

PREPARE grill for indirect cooking over high heat (400°F). Cook chicken in pan on covered grill 20 min. or until no longer pink in center.

I Cooked Dinner!

I do not normally cook and last night I cooked a healthy dinner! I am very proud of myself. It looked great and tasted even better.
I cooked two boneless chicken breasts with chicken seasoning on both sides, Taco Bell mild sauce, salsa and fresh cilantro. I also cut up raw potatoes and steamed some broccoli.
A wonderful start to eating better and cooking for myself.

Making Good Food Choices

As I posted yesterday, I am off the Master Cleanser. I have jumped right into making good food choices and am very excited about it.
This morning I had a medium wildberry smoothie from McDonalds, 260 calories and 60 carbs. That is a bit more then I intend to do, so if I get one again I will get the small instead of the medium. For lunch I had chicken and wild rice soup, 200 calories and 34 carbs. For dinner I plan on baking boneless chicken breast with salsa.
After today I will plan my meals out like this: shake for breakfast, shake for lunch and a reasonable dinner. I will also have veggies and fruits for snacks.

Master Cleanser Day 3

I have made a dissension. I am not going to continue with the cleanser in the traditional sense. Instead, I am going to have the mixture for breakfast and lunch and EAT a reasonable dinner.
I was talking with a friend and I realized that I kept saying how excited I was to start making good food decisions. I said it so many times I realized that making good food decisions is what I want to work on right now, not a cleanse or fast.
Instead of the cleanse, my goal now is to make good food decisions. I am a little disappointed about discontinuing the cleanse and am very excited to start making good food choices.

Master Cleanser Day 2

I really do no like the way the mixture tastes, yuk! It totally brings back memories of when I did this a few years ago.
Yesterday I did get a little hungry and had a ghost of a headache, but nothing stayed around long. Tracy and Megan, on the other hand, said they were hungry all day and I believe they both had headaches.
There was no real temptation to eat last night. Toby had a peanut butter and jelly sandwich so there was no lingering food smells in the house.
When I went to bed around eleven I started to feel hungry. I was really worried that I would wake up with a headache and feeling really nauseous. I have not been sleeping well since about August, not sleeping through the night and waking up every hour or so. The amazing thing is that last night I had excellent sleep and I woke up feeling so good. I was surprised. I feel great!
This morning we were running real late and instead of making Ethan’s breakfast we just stopped at McDonald’s. Yes the food smelled good, but I was totally fine without it. I can totally do this!

Master Cleanser Day 1

Today is my day one on the Master Cleanser. I have done this cleanser before a few years ago and I did not keep track of my days or how things were going. This time I will keep track day by day.
I have decided not to use real lemons because I am lazy. I have substituted real lemon juice that I bought from Costco. Each day I will drink 60oz of water mixed with 6oz of grade B maple syrup and 6oz of lemon juice. I will also drink water throughout the day for fifteen days.
I am doing this cleanser for the purpose of cleansing and also to help me reevaluate my relationship with food. The last time I did this cleanse I had an epiphany about the amount of food I really need to eat. I am hoping for the same kind of insight this time around and I will document it so I can go back and read it at any time.
I am interested to see if I get headaches, get hungry and how much energy I will have. On an average day I feel pretty sluggish so I am interested to see if that stays the same or not.

Master Cleanser Ingredients

I was able to check an item off my 2011 To Do List yesterday because I ate Indian food for the first time.  Tracy and I went to Swagat Indian Cuisine on 109th avenue in Beaverton for their lunch buffet.

The interior is very nice and the service was friendly and prompt.  My favorite dishes were the goat curry and chicken tandoori.  This was my first time eating goat as well (too bad it is not on my list so I could check it off).

All in all Tracy and I would like to give it another go with another restaurant.  Maybe by the end of the year I will have crossed this item off my list multiple times  ;  )

2011 Tis The New Year

This is the first day of the 2011. Happy New Year! I have a list of things that I am going to do this year. I left it at work . . . so I will have to incorporate it later. The first thing I am going to do this year is The Master Cleanser for 15 days and I start on Monday the 10th of January.

I will be doing the cleanse with Megan and Tracy. Tracy will probably only do it for a day or so and I hope that Megan will be able to continue through all 15 days. I am excited to be doing this cleanse again. I did ten days or so a few years ago and since I have been through it I have a rough idea what to expect. I will keep a log/journal this time around and I will be focusing on a few things that I want to keep track of. One of the things is how much energy I have. Currently I weigh 250lbs and am pretty tired most of the time. I am curious to see how much energy I have on the cleanse. Another thing I am going to track is my hunger. I want to be able to determine if I am hungry because of the lack of food or if is just my brain that thinks I am hungry. I believe it will be mind over matter and it will be more physiological then physical.

After the cleanse I will ease back into food. I will have a SlimFast for breakfast and lunch and then have chicken broth for dinner for the first day or so after the cleanse. After that I will have a SlimFast for breakfast and lunch and then have an apple at three and then meat, salad and potato for dinner. I will do this till the end of January. One of my goals for this year is to work out on Monday and Wednesdays till the end of January so I will be doing that as well. At the end of January I will reassess that workout goal. I want to make my workout goals short term, I believe that a short term goal will be easier to complete then a long term goal at this point.

EA Active

I just got EA Active for the Wii (we’re huge gamers here)! I’ve been waiting for it to be released.
I started the 30 day challenge today. MAN! It was hard and I had it on easy! I told Toby, “I had a great workout.” and he was like, “Yah, I heard.” OH NO! He must have heard me cussing! But the workout was so hard I couldn’t help myself. My legs are like jelly. Who knew that the trainer would know how far down I was going in my squat?
My goal was 121 calories in 20 mins and I did 125 calories in 16 mins. It was intense!
We’ll see how I do after five days or so!
I’m still going to my trainer and going to the gym. 202lbs this week. I wonder what next week will be? Although…I did have drinks tonight…
